Gazpacho is one of my all time favorite meals during the summer because you're eating soup, but not getting overheated! My mom always made this growing up and it is really easy to throw together. The only kitchen tool you need is a blender/food processer and otherwise just a handful of ingredients. I adapted a few different recipes to come up with this one so feel free to add or remove items as you see fit!
2 cloves garlic
1/2 red onion
2 stalks celery
1 large cucumber
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
Dash black pepper
2 cups good-quality tomato juice
1/2 pound cooked and peeled shrimp
Add everything to the blender (excluding the shrimp) and pulse until finely chopped
Dice onions, cucumbers, avocado and celery for the topping and add shrimp.
Chill for 1-3 hours and serve cold with crackers and a nice glass of white wine!
