This is one of my favorite soup recipes and it is SO easy. My mom cooked this all the time growing up, and now I break this recipe out every time it gets cold. It makes about 6-8 servings and is great to have on hand throughout the week. See below for recipe details!
1 pound ground beef
1 can pinto beans
1 can whole kernel corn
1 can ranch beans
1 can beer (special ingredient! I love using Blue Moon because it adds a great wheaty taste to it)
1 can stewed tomatoes
1 can Rotel
1 envelope taco seasoning
1 envelope Ranch style dressing mix
Brown beef and drain, return to pot
Rinse and rain pinto beans, corn and green beans
Stir all ingredients into beef, and bring to a boil. Reduce heat and let simmer for 30 minutes
Crumble tortilla chips on top and voila!
